My Mum always makes pavlova or ‘pav’ for Christmas dessert and now that I have a family of my own I carry on the tradition. Pav is an Australian meringue cake with a light crisp crust and a soft marshmallow center that is topped with whipped cream and fresh fruit. Is your mouth watering yet?
As an early Christmas present to you all, I have included the recipe so you can wow your family with this divine dessert that is so easy to make. Hurry up now and get baking!
Pavlova Recipe
Ingredients
- 4 large egg whites
- 1 cup of sugar
- 1
teaspon of white vinegar - 1/2 tablespoon of cornstarch
- 1 cup of heavy whipping cream
- 1/2 teaspoon of vanilla extract
- Fresh fruit such as kiwi, strawberries, raspberries, blueberries, passion fruit, pineapple,
bannana or other fruit of your choice
Preheat oven to 250 degrees Fahrenheit and place rack in the center of the oven.
Line a baking sheet with parchment paper and draw a 7-inch circle on the paper. *For extra festive credit trace a smaller circle in the center of the 7-inch and you have now created a Christmas pav wreath!
Using an electric mixer beat egg whites on medium-high until they hold soft peaks. With the mixer still running start adding the sugar, a tablespoon at a time, and continue to beat until the meringue holds very stiff peaks.
*Pro tip – test to see if the sugar is fully dissolved by rubbing a little of the meringue between your thumb and index finger. The meringue should feel smooth, not gritty. If gritty keep beating until it feels smooth between your fingers.*
Sprinkle the vinegar and cornstarch over the top of the meringue and gently fold with a spatula.

Bake for 1 hour and 15 minutes or until the outside is dry and takes on very pale cream color. Turn off the oven, leave the door slightly ajar and let cool completely in the oven.
The cooled meringue can be stored in an airtight container for a few days!
When ready to serve top with whipped cream and fresh fruit.
